Fairmont Hotels & Resorts in the expansion of its Green Cuisine ( «Green Kitchen») will offer guests a more ecological fish menu.
By spring 2009, all purchases of seafood Fairmont will be carried out under the supervision and with the advice of these groups.
The restaurant menu will be removed from the dishes of fish species threatened with extinction, such as the Patagonian toothfish and tuna. Fairmont company intends to join efforts with local organizations to supervise seafood.
Fairmont will also help our guests be more reasonable from an environmental point of view, the choice of dishes. To the menu of restaurants the hotel chain will contain information on the most «responsible» meals of fish.
